When I was very young my grandmother handed down a recipe for a wonderful fruit ****tail, (from cans), cake. Alas it has been misplaced. I recall the interesting part of the recipe was that this 9 by 13 inch cake called for very little flour and the brown sugar, butter, and evaporated milk topping was cooked along with the cake. This icing would, of course, settle in the cake similar to a pineapple upside down cake. Got any ideas? Thank you in advance.

Cherry Cream ****tails Smile
2/3 cup half-and-half
1/2 cup cream of coconut
1/3 cup dark rum
1/3 cup cherry brandy
3 Tbs. maraschino cherry juice
1 Tbs. grenadine
1-1/2 to 2 cups ice cubes

Combine half-and-half, cream of coconut, rum, brandy, cherry juice
and grenadine in a blender container. Process until mixed. Add ice
and process until frothy. Pour into glasses. Garnish each serving
wiht whipped cream and maraschino cherries, if desired.

if you want to try something easy take a yellow cake mix drain the fruitcan measuring out the juice add enough water to it to make up the liquid for the cake mix. make the cake mix as called for stirring in the fruit. melt 3/4 stick of butter add if you like 1/2 cup of dark rum to it and pour in pan sprinkle with 1 cup of brown sugar and pour batter over cook and invert when done

here are a couple of recipes i found. Hope these help you.

1: Fruit C.o.c.k.tail Cake

INGREDIENTS:

2 1/2 cups all-purpose flour
1 can (16 ounces) fruit ****tail, undrained
1 1/4 cups light brown sugar, unpacked
3 tablespoons shortening
3 tablespoons butter
2 eggs
2 teaspoons baking soda
1 teaspoon salt
1 teaspoon vanilla
.
Topping
1/2 cup flaked coconut
1/2 cup chopped maraschino cherries
PREPARATION:

Combine flour, fruit ****tail, brown sugar, butter, shortening, eggs, soda, and vanilla. Beat at medium speed of electric mixer for 2 minutes. Pour batter into a greased and floured 13x9x2-inch baking pan. Sprinkle with coconut and maraschino cherries. Bake at 350° for 35 to 40 minutes.

2: Fruit C.o.c.k.tail Cake

2 cups flour
2 cups sugar
2tsp. soda
1 tsp salt
3 eggs
1 large can fruit ****tail (undrained)
Mix all ingredients and Pour into 12x9x3 pan--
bake at 325* for 30 minutes

TOPPING
1 stick oleo
3/4 cup evaporated milk
1 cup sugar
1/2 cup chopped nuts
1 tsp. vanilla
coconut (optional)
mix all ingredients in pan, boil 10 to 15 minutes till thick--
pour over cake when done and still hot
VARIATION---instead of topping---mix 1 cup brown
sugar and 1/2 cup pecans--sprinkle over cake before baking

Please be informed the asterisks apparently are protecting the innocent from a potentially dirty word. Maybe I should say fruit medley, (frequently bathed in corn syrup and found in the canned fruits and vegetables section of the supermarket).
