So here's a question I've had for awhile now; everyone's heard of standing rib roast - and then there's regular rib roast. What makes a standing rib roast 'standing'? Is it the bones?

I know very little about the various roasts.

The standing rib roast usually includes at least three ribs (less than that is really just a very thick steak). It's roasted standing upright, resting on its rack of ribs, which allows the top layer of fat to melt and self-baste the meat.

So it's the same as a prime rib roast only the meat is choice or select?

That's correct. You can have a select standing rib roast, a choice standing rib roast, or a prime standing rib roast.
