It's been awhile since I've had Pheasant, but they are the 2nd best fowl I've ever eaten (right behind Quail). Both Pheasant and Quail can be fixed this way:
Clean, skin and rinse the raw bird. Dry thoroughly.
Salt and pepper thoroughly inside & out.
Place in baking tray and wrap each bird with peppered bacon. Place in 350 oven and bake until done. It's a very unique flavor, somewhat in between pork and fowl.
