Does anyone know of an easy tofu recipe that someone just starting out adding tofu to their diet might be able to make? I'm talking like two to three ingredients - nothing fancy at all. Thanks!

Tofu is a substitute for ricotta cheese in lasagna. You can use it to make salad dressings, in cheesecakes, to make mayonaise, in soups, on salad. You can grill, bake, saute' or broil it.
here are a few recipes i hope will fit the bill for you.

1: Easy Tofu

1 package extra firm tofu
2 cloves garlic
soy sauce
vegan margarine
carrots
pea pods
water chestnuts
baby corn

Heat a skillet to medium. Place a pat of vegan margarine into the skillet. When that is melted place cubed tofu into the skillet.

Wait till the tofu is almost brown and then put finely chopped garlic into the skillet.

Wait till tofu is a golden brown and then place veggies in. After the veggies are warmed put in soy sauce to taste.

Serves 4.

2: Fast and Easy Tofu Lo-Mein

INGREDIENTS:
1 (16 ounce) package extra firm tofu
2 tablespoons olive oil
2 (3 ounce) packages Oriental flavored ramen noodles
1 (16 ounce) package frozen stir-fry vegetables
1 1/2 cups water
1 tablespoon soy sauce, or to taste

DIRECTIONS:
Press tofu between paper towels to remove some of the water; cut in to bite size cubes. Heat olive oil in large skillet over medium-high heat. Add tofu, and fry until golden brown, about 15 minutes. Stir occasionally to prevent burning.
Meanwhile bring water to a boil in a medium saucepan. Add noodles from ramen packages, reserving the seasoning envelopes. Boil for about 2 minutes, just until the noodles break apart. Drain.
Add the stir-fry vegetables to the pan with the tofu, and season with the ramen noodle seasoning packet. Cook, stirring occasionally until vegetables are tender, but not mushy. Add noodles, and stir to blend. Season with soy sauce to taste and serve.
